In Squarespace 7.0, choosing a template was a critical part of building a website because each one came with different utility, design, and limitations on what you could and could not do.
In 7.1, most templates have similar structures and functions. This helps you pick a template because most of the differences are now cosmetic (rather than having to pick and choose features) but the sites are less customizable and less specifically dedicated to certain types of sites (portfolios, shops, etc.).
Squarespace 7.0 vs. 7.1: Design Differences
Overall, 7.1 gives you slightly more creative freedom and intuitive design features than you would find in 7.0. Here are some key differences:

More Styling Control: 7.1 gives you more control of fonts, colors, buttons, and more by grouping them in more intuitive ways rather than by page in 7.0.
What’s Not in 7.1?
7.1 is not all additions and new features, some things from 7.0 are lost in the update. Features like template switching and separate mobile style options do not leap because they were cut altogether or were replaced by new features.
Squarespace 7.0 vs. 7.1: Decision Time
First, if your site is in 7.0 you will want to stay there unless you want to rebuild your entire site from the ground up because you cannot transfer your site to 7.1. Also, if you are happy with your site, there really is not much reason to do so anyway. Squarespace is not leaving you out in the cold if you choose to stay at 7.0.
If you are just now choosing to build a site, it depends on how familiar you are with the older 7.0 building. If you are experienced in 7.0 and want to use it again, do that. But, if you are new to site building and want an easier process with the most updated features, choosing 7.1 is probably your best bet.
